Jefferson Bourbon’s Master Distiller Trey Zoeller is a huge fan of the Upper Valley Cabernet Sauvignon wines from the Pritchard Hill region of California. So for this limited edition whiskey, Trey worked with with Cyril Chappellet of the Chappellet Estate Winery – known for establishing this area of Napa Valley – using their wine casks to age this bourbon.
The method used here was a twin wood aging process, incorporating a blend of three complex, elegant and sophisticated bourbons that were aged in new American Oak barrels, and then finishing them in French Oak casks that once held Pritchard Hill Cabernet Sauvignon from the high elevation, rocky slopes of the Chappellet vineyard in St. Helena, Napa Valley.
This, Trey says, contributes aromas of blackberry, black cherry, licorice, dark chocolate and a lush sweetness to the bourbon.
